For the ultimate summer vibes, burn a Champagne & Red Raspberries Soy Candle while making this delicious cocktail. Sweet, juicy notes of raspberry and lychee with fresh, bubbly notes of champagne and vanilla cream will fill the room.
1 cup fresh raspberries and blackberries
¼ cup sugar
4 tablespoons fresh lemon juice
1 ½ cups (350ml) champagne or dry sparkling wine of your choice
Step 1: Cook raspberries, blackberries and sugar with ¼ cup (60ml) water in a small saucepan over low heat. Stir for approx. 12-15 minutes until sugar is dissolved and berries have released their colour. You do not need to reduce the liquid.
Step 2: Strain the berry syrup through a fine mesh sieve into a bowl, cover and allow to chill.
Step 3: Add 2 tablespoons of your berry syrup and 1 tablespoon of lemon juice per cocktail glass.
Step 4: Top with champagne and garnish with fresh raspberries.
